We select the very best quality Kangaroo Island lamb from our own property and selected KI properties in the cleanest, greenest part of the state. We only take the top draft of lambs from any one line. The lamb comes from farms that clearly exercise a positive animal welfare philosophy, with low chemical inputs.
On our own farm "Creek Bay", the lambs are free-range-grazing a bean crop that we planted in May. Once they have cleaned up the beans they will graze a standing barley crop or millet and turnips depending on the amount of summer rainfall we get.
Other Southrock Lamb producers have their own way of producing quality, stress free lamb and they will be featured on our web site over the coming months.
The lambs are handled as little as possible and when processed aged to improve the eating quality.
Once the lamb has been selected we transport to Normanville and then on to Adelaide, where we distribute our boxes of lamb. This happens every month.
Andy says "Producing quality lamb is not unlike wine making, where the many variables can be adjusted to produce a premium product."
Andy has been a long term client of Ella Matta White Suffolk Stud. Stud master Andrew Heinrich believes that what the Gilfillans are doing is tremendous and having been on their property many times sees it as a wonderful clean environment for growing top quality lamb. He says:
The Gilfillan family have been highly valued clients and friends of Andrew & Tracie for some time now. They buy rams at the top end of the Ella Matta sale which will ensure that they produce high quality lamb.
